As the crispness of winter gradually gives way to the refreshing notes of spring, there's no better time to celebrate the vibrant flavours of the citrus season. This weekend, indulge in the marriage of rich chocolate and zesty orange with our Gluten Free Chocolate & Orange Fondant Cake—a delightful treat that's as simple to make as it is delicious.

 A Recipe That Enchants the Senses

This fondant cake is a celebration of contrasts. The deep, velvety richness of chocolate is beautifully complemented by the bright, tangy notes of fresh orange zest. The use of almond meal instead of flour ensures a moist, tender crumb, making this cake not only gluten free but also irresistibly rich.

 A Taste of Morocco and Local Goodness

Reflecting on our trip to Morocco last year, I'm reminded of the most delicious orange juice we enjoyed, freshly pressed on the roadside in Essaouira. The flavour was unlike anything I've ever tasted—vibrant, sweet, and bursting with the essence of sun kissed oranges. We were thrilled to recreate a bit of that experience in our own kitchen with the most delicious and ripe oranges we recently received in our Good & Fugly veggie box. These oranges brought a bright, fragrant zest to the cake, making it a true celebration of the citrus season.

 Ingredients
180g chocolate
150g butter
150g sugar
150g almond meal
5 eggs
Zest of 2 oranges

Method
1. Preheat your oven to 180°C.

2. In a bain-marie (a heatproof bowl set over simmering water), melt the chocolate and butter together, stirring until smooth.

3. Using an electric mixer, whisk the eggs and sugar until they become light and foamy.

4. Gradually pour the egg and sugar mixture into the melted chocolate and butter, gently folding to combine.

5. Gently fold in the almond meal and orange zest, mixing just until everything is incorporated.

6. Line a baking dish with parchment paper, ensuring the edges are covered to prevent sticking. Pour in the cake batter, smoothing the top with a spatula.

7. Bake the cake for 20-25 minutes. Keep an eye on it—you're aiming for a cake that's set on the outside but still soft and slightly runny in the centre.

8. Once baked, remove the cake from the oven and let it cool in the pan. For an even more indulgent texture, allow it to chill in the fridge. This helps the centre set while maintaining its deliciously gooey consistency.

9. Serve slices with a dollop of whipped cream or a spoonful of tangy yoghurt, accompanied by citrus segments or a smear of marmalade. A perfect treat to savour the weekend.
